Just taken on a second plot intending to grow fruit, (among others), would like a few apples but dont have space for trees so thinking of doing espalier trained instead, anyone got any suggestions as to which varieties may be best ?

I looked at the ones below and ended up choosing Fiesta and Sunrise. A few things to consider: -

Different root stock give different size of trees. MM106 etc.
How many branches / layers you intend to grow.
How you intend to support the branches.
Do you want early, mid season or late varieties
How to pollinate them. Not required if you have apple trees near your plot.
Its a 4 or 5 year project before you get to pick apples. I'm in year 1.

Discovery
Fiesta
Jupiter
Scrumptious
Sunrise
Lord Lambourne
Sunset
Elstar
Rajka
Topaz
Greensleeves
