harvesting horseradish

harvesting horseradish

This spring I planted 3 horseradish roots (well away from everything!). Should I harvest all  plants this year or just as much as I need? When I harvest the root the advice seems to be to leave a little bit of root behind for next year; how much exactly is a little bit of root?

Just dig up a bit when you want it.  Don't worry about the 'little bits' you are bound to leave some behind.
