Parsnips looking better than ever before. Is wine making a viable option for the surplus?? Can I please ask for a pointer towards any good recipes and directions for a novice (novice to wine making that is but not to wine drinking or to parsnips)

This is from a book of country wines I have.

4lb Parsnips, 1 gallon water, 4lb demerara sugar, 2 lemons, 2 grapefruit, 1/2 yeast.

Scrub parsnips, do not peel, cut into chunks boil with the water and sliced lemons and grapefruits (not peeled). Cook until tender but not mushy. strain onto the sugar and stir well. When cool add yeast. Leave in fermentation vessel covered for 10 days then strain and add to demijohn to allow fermentation to carry on.

After this follow normal wine making procedures i.e. ferment, rack then bottle,

Parsnip wine is very nice, but we love parsnips too, so never have too many, and curried parsnip soup is wonderful!

Make your wine with something else! and send me your surplus parsnips!!
