I have made some jam which I wish to sell but I have no idea how to work out the amount of fruit and sugar used per 100g to make 100g of end product??? Apparently this information is legally required by trading standards so there must be a formulae to calculate it but I have no idea! Please can anyone help???

I don't specifically know, but generally recipes state how much end product should result so can you work it out from there?
W.I. books may be particularly useful, I guess, too.

Our village shop sells jams made by 2 different local ladies and they list ingredients in the order of quantity but there are no percentages on their labels, no one has bothered yet.

If you are selling your own jam direct to the public you do not need this. I was told by trading standards. Just label the flavour and weight. You are there to go into more detail if the customer asks.
It becomes more complicated when wholesaling as in through a shop.
Realistically I've only ever had one inspection from anyone and lots of people sell jams ect at fetes steam shows ect and never see anyone.
