Spinach help!

Hi Everyone,

I'm new to this site and the world of vegetable growing. I have a small raised veg patch in my garden which currently has Beetroot, Radishes, Brussel Sprouts, French Beans, Strawberries, courgettes and Spinach growing.

A few days ago my spinach started to sprout stems with little buds which I am assuming means its flowering. After doing some research I now know this is called Bolting- what I don't know is what I'm supposed to do now? Do I need to dig up all the crop and eat or freeze it, leave it to flower and seed or just leave it?

Any help would be really appreciated!

We had this a little while ago, it seems that a lot of spinach is off on the rampage.  I just cut the flower stalks down to the leaves and see what happens, it usually shoots out from the sides and is perfectly ok.
