At the end of some of my tomato's trusses there is a sudden spurt of new growth. Should i pinch that out to conserve the energy for the fruit formed already?

This is what usually happens when you have pinched out the side shoots and stopped the plant.
That growth will become another flowering side shoot. You may even see some growing out of the leaves,
I would take them all off.

I always gently nip them off because I find the toms on that truss don't develop so well.
