Elderflower Champagne

Hi

I'm just about to embark on my first go at making elderflower champagne.  I just wanted to ask about the quantity of flower heads to use.  I'm making about 6 litres, but have seen recipes stating anywhere between 6-15 heads, and I'm really not sure how many to use.  I'm assuming if you use more it affects the taste, but also might have more of its own yeast in it which could make it prone to exploding.  Could anyone advice me?

Hi Maccbean, there is a discussion about this in the Homebrew section of this site, just under the cooking one.  There is a link to a HFW recipe which suggests 15 heads per 6 litres.
