spinach

we got a very large spinach we now eating,when its had its days do we leave it in the ground ready for the next time or have we got to rip it out totaly.

last year, I was clearing some spinache that had bolted. I sliced the plants off at ground level with a spade and left the roots in. 2 weeks later, they had sprouted new leaves and I got a second (small) harvest off them
