Doughnut ! Go to the garden centre and have a look at seed packets for winter caulis and see what they say. I would assume that you need to sow in the next couple of months or so. Haven't tried them myself so not much help there. "All Year Round" springs to mind as a variety to try.
I work very hard so don't expect me to think as well.

Walcheren Winter Pilgrim.

Sow late June.

"All Year Round" is a bit of a misnomer.

Sow January-June to harvest June- October. You only sow for half a year.

You can sow "all year round" in October / November, overwinter, and plant out in the Spring - it's worked for us this year. You need a bit of space and a few pots as they get big quick!

Winter Pilgrim can be planted in the open ground in the autumn & just be left to it.

Patriot is another that can be planted early September and cropped now  :)

The best overwinter cauliflower I have found is, Jerome, from Marshalls Seeds. Sow May/June, harvest March/April. They produce large solid pure white curds, which are welcome at a lean time of year. 
There is no better show of antisipation than a man sowing seeds in a field.
