I cut the stem off but im a newbie to this growing stuff so i bet thats the wrong way lol

Just put flowering rhubarb into the search at the top of screen and you'll get all the advise you need. In the main it seems cut the flowering heads off

Yes, cut the flowers off as soon as you notice them but if you can leave them to grow-on a bit they are lovely in big flower arrangements So if you only have one plant cut them off early, if you have a huge patch leave a few to put in a vase.

Yep just pull the flowering stems out, everyone seems to be having trouble with rhubarb this year going to seed

It seems no matter what the weather, rhubarb always wants to go to seed. So as already said, pull out the whole seeding stalk or it will keep sending up more flower shoots from that same stalk. They're pretty but they do limit the amount of edible stalks you get.
