If someone accidentally picks the growing point out of my toms, thinking they're side shoots (doh!), is that it - game over? I'd be particularly disappointed - they're Black Russians, a heirloom variety, which I was looking forward to tasting.

Not necessarily have you also stopped out the side shoots ? If not choose the one nearest the top an use this as the leader, if you have already took them all out, then the only hope you have is  that the plant will throw up a new side shoot. But either way flowering will be delayed.

The worst that will happen is that you'll have a shorter, shrubbier plant rather than a taller one, not that Russians grow that tall as they're mostly fast growers for that climate.

I did that to some of my green grape toms last year, so they only grew to about 3ft (ish), but still had loads of lovely little tomatoes from them.
