All the books say that to grow the best beans you should dig a trench and fill it with vegetable waste etc.  We want to do this but are worried that it will attract all the rats and mice in the area, what do we really need to do?

Dig a trench and fill it with well rotted manured or well composted organics.

we dig down a full spade depth , 1/2 fill with manure, then refill the trench ,

this leaves a raised area where the beans are to be planted,

place canes into the raised area and plant up with young bean plants , ours will be 6-8 inches high,

dont let the bean plant roots touch the manure keep them 2 inches from the roots , the roots will travel down to the manure,

keep picking the beans , the more you pick the more you get ,

IMO rats are usually only interested in cooked food/meat.
If you don't want to use kitchen waste line it with papers and torn up cardboard and fill it with compost and grass clippings. Anything really that will keep the moisture near the roots.
