Does anyone have a tried and tested recipe they would share.

Pataks curry paste. You can't go wrong.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

Pataks curry paste. You can't go wrong.

Been there - its makes a nice enough curry but it doesn't have the right taste.

Lardman i  have a proper indian recipie lots of onions and really smells bad but its the way they do it i`ll dig it out for you as soon as i can

I don't think a base is the authentic way to go for a good curry, it's a restaurant quick fix one base fits all.  Many Indian restaurants aren't at all  - they're Bangladeshi, so you don't always get the flavour you should

I make curries from scratch and less fuss than the base  :)  For a good flavour you have to take the time to cook the onions properly which is usually longer than 20 minutes.  The oil seems to re-appear as the onions cook out and then you have to turn the heat up a bit until the oil has gone but without letting the onions burn. You need patience  :D

Its not the authentic taste Im after CQ, I wont bore you with the details but I don't eat takeaway food anymore, and just occasionally I really have a craving for the takeaway taste, not a good curry but a takeaway curry.

I can get it pretty close but it always has an underlying tomato taste.  :(

I make one with tonnes of onions fried in homemade paste, (just pureed garlic, chilli and a bit of ginger and some spices), until soft take half the onions out, then boil the rest in some stock with a parsnip and a potato, sounds mad I know, when cooked I blend until smooth and then add the rest of the onions back in and whatever meat i;m using and maybe some ground almonds or cashews too.

Its a bit of messing but kind of gives you the take away style curry.

Its taken me bucket load of googling, forum reading, trips to 3 supermarkets and finally a trip over to renew my Makro trade card ... but this was tonights dinner..

It is by FAR the closest I've ever come to India takeaway food - in fact if I hadn't over done it with with garlic I think it would have been spot on..

Please excuse the hob top (I do clean it honest !)  :wub:

Im not sure I can without upsetting people.  :(  This particular madras was a mixture of several different recipes.

I would certainly recommend joining the site Yabba posted - I thought Id died and gone to curry heaven after reading some of the posts. I'll have to stress its not for the healthy living club.

I need to sort the pilau rice out now then jobs a good'un.
