Quince upside down pudding

I came across a jar of quince in syrup in the cupboard today, must have picked it up on one of our European jaunts. Having never eaten Quince and only ever seen it used for jelly I wasn't sure what to do with it.

I put the slices in a flan dish with a couple of handfuls of blackberries and covered it with sponge mixture like a pineapple upside down. I added some Damson gin to the syrup and reduced it a little and then poured it over the cooked pudding.

It is really tasty but I wonder what else I could have done with the quince. Any one have any other ideas.
