Onions

I'm going to grow onions for the first time this year (from sets). These will be a non-red variety. Any recommendations about what variety I should go for? In my allotment days I grew Ailsa Craig, but things have changed a bit since then I guess.
Growing salad leaves isn't rocket science.

 I grew "Centurion" last year and they were my best ever crop.

Stored well also.
Did it really tell you to do THAT on the packet?

I grew sturon and was very pleased at both the size and how few I lost to rot. My red Baron were not so good but you'r after non red anyway.

I was given half dozen of turbo last year as I normally only grow shallots, pretty good and stored well.

I always use Sturon, they are very reliable and store well. :D

I grew New Fen Globe from Marshalls last year and they were good and stored well. Some were too big if anything! I have also grown Ailsa Craig in the past and they also grew well.

Im growing onions from seed in a seed tray on my kitchen window ledge. Ive never done this before - should the shoots be standing up, or trailing everywhere like mine. Theyre rooted ok and still growing, but it just looks odd!
