Pea Shoots.

I am thinking of sowing some peas specifically for harvesting the tops as "Pea Shoots" for trade  locally. (swap a small bag for a pint in local foodie pub)
Perhaps starting a few in an unheated greenhouse in February before the cues and toms go in.
Does anyone have experience of which type, height or variety would be best?

For early sowings you need a round variety, Early Onward, Feltham First, Kelvedon Wonder etc..

But I have to say what you intend doing with them brings a tear to my eye. :(
Did it really tell you to do THAT on the packet?

I had some soaked peas left over after sowing in the conventional way so I put them in the cold frame, sown very close together and with the varieties Douce de Provence and Spring mixed up.
 
It worked well for a harvest of pea shoots, but I have to say that I find the tendrils too stringy.

I would suggest any variety would do, though preferably a dwarf one, and definitely sow them very close together because the plants are not going to get to any size.
