One of the jobs I have not got round to so will aim to do this at the weekend. Now, is covering the cut down stalks etc with manure the way forward?

Basically, yes. Asparagus want a rich soil, just make sure it`s well rotted. :D

And its best if the manure doesn't touch the stalks to avoid potential mold problems.

I agree, but if it`s done now the worms should it take down over winter before the shoots appear.

I planted seeds earlier this year, so this is the first year for the ferns which are quite small about 15-20cm high.  Should I cut the ferns off and then mulch?  Just put some manure over the top?  Or leave them as they are?

If they are well supported the ferns can stay all Winter if you want them as a decorative item. The new shoots usually appear in April.

i cut mine down last week just becuase 2 neighbouring plot holders did with theirs! One or two of the stems (out of 40 plants) were a bit wooded but the rest seemed ok so hopefully all will be fine next April/May!

As a rule of thumb, as long as the fronds are green, leave them be. They're still feeding the roots. Once they start to dry out and go brown, then trim them off if you want. They're quite happy staying there for winter interest as mentioned and when they flop over they provide their own bit of mulch. Mulch is rarely needed for asparagus as they're so tough, but they do need some feeding if that's what you really mean.
