I've never eaten venison before and need a good recipe for steaks.  Please help, I'm hungry.

Thanks Shaun.  That's how I thought but I like a good sauce or gravy too.  Got Port, Madeira, redcurrant jelly shallots, herbs etc and some home made chicken stock in the store cupboard.

Marinade it over night beforehand.  Put a little port in the marinade.  :wink:

Thanks Parrot.  Is an overnight marinade the best thing to do?  I really want to like venison as I have waited 51 years to taste it. :shock:

ohh have some toast then  :wink:
when you fry it just give it a quick blast in a realy hot pan and leave for a about 10 minutes to rest

So treat it like a good beef steak then.  I'll marinade one piece overnight and flash fry the other tonight.  Might invent a sauce with port, redcurrant jelly shallots and lemon juice.

Why not do both?

Do you know the source of your venison?  ie;  farmed or wild.

The marinade not only makes it taste delicious but tenderises the meat also.  It was always wild roe venison that we used to eat.  For a wild animal that spent it`s life pronking and running around it was VERY tender.  Real melt in the mouth stuff.   Wild roe meat is the only venison I have ever eaten.  Beautiful lean and tasty meat.  

It`s also lovely roasted.  Just baste it regularly.

Oh my god, I just ate Bambi and it was wonderful. :lol:   What I had today was just something I spotted in the evil Tesco.  Thought that if this was good then venison from a decent local butcher must be a hundred times better.  Can't wait to try the real thing.  My sauce needs refining, but experimenting will be a pleasure.  Can't believe I waited 51 years to try it. :lol:
