Eating dry french beans

Hi all

Have found related posts but not exactly what I was after so here goes... we've just taken an additional lot and it had plenty of dry French beans on it - have collected about a pint... that's way more than I'm going to resow so was wondering about cooking them as dry beans - any reasons why not (thinking about that red kidney bean thing) or tips on cooking time etc?

Eat them - delicious.

At this time of year they probably shouldn't need much soaking, but you can soak them overnight to make sure.

Loads of options:

Boil for 20min and eat as a veg.
Add to stews.
Slow roast in a crock with chopped onion, tom paste, white wine, herbs, and an optional piece of cured bacon fat (or chourico, or pig's trotter, or a piece of bacon, or a piece of cured knuckle/hough (the best!)).
Mash cooked/boiled beans and recook with oil and epazote (a herb) to make mexican refried beans.
Sprout them and add to salads.
Keep them in a glass jar in the kitchen, they look so beautiful!

Subsitute with 'fresh' beans in any recipe which calls for lima beans, or with dry beans for anything that refers to borlotti beans.

cheers peeps... will cook some on their own so I can taste what they're like...

quite a bit of produce left on our new plot by outgoing tenant - can't believe our luck, a nice plot and free veg!
