I would have used poppy seeds instead of linseeds anyway, they are YUK.
I actually like fennel seeds in bread, though :)

I'm also easily led mumofstig, cos I taped the same programme, watched it the other night and went out and bought some wholegrain spelt flour yesterday  :blush:

These 2 ideas are on the packet of flour I bought

Olive bread

250g spelt flour
1/2 teaspoon salt
1 teaspoon quick yeast
1 teasppon sugar
175ml warm water
3 tablespoons olive oil
75g pitted olives

Mix flour, salt, yeast & sugar
Add water and mix in roughly
While dough still craggy, mix in oil & knead until dough is smooth
Cover and leave to double in size
Turn dough out and knead in olives
Cover & leave to rise for 25 mins
Bake 200 degrees centigrade/gas 7 for 35 to 40 mins

Honey & cinnamon cookies

200g spelt flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
100g honey
100g sunflower oil

Mix everything together to form a dough
Place teaspoons of mix on oiled baking sheets - leave room for them to spread
Bake at 190 degrees centigrade/gas 5 for 8 to 12 mins

I was going to have a go at both.......nothing ventured and all that  ;)

Well i made a small loaf 8) just to see what's what.
I had a recipe for 500g of flour which i was halving.....so far so good.
But silly billy that I am I didn't halve the honey so bread was perhaps a little sweet :unsure:
The bread doesn't rise as much as modern wheat, but didn't seem as 'heavy' as normal homemade wholemeal. It 'comes together' as pliable dough quicker than usual so doesn't need as much kneading  :D
Will definitely eat it all 8)

Next time i will make a full size loaf and not use a tin and hopefully get a nice crusty loaf :)

Fennel would certainly substitute for linseeds rather well. It is one of our favourites  :D
