Quince - What to do with it apart from jam/jelly/membrillo?

I've been offered some quinces but still have nightmares about the 3 tons of quince paste I made 2 years ago where I stood at the hob stirring this gloopy dangerous swwet mixture for about 3 hours.... I had to find a phone directory to stand on. Nightmare...!

So, do any of you have any recipes for non jammy quinces?

Put some into apple pies, makes them really special. 
Their perfume is wonderful so even if you're not going to cook with them just leaving them in a bowl fills the whole house with amazing perfume.

Agree with Spana.

I have also made quince brandy. Chop the quince into 1/8ths. Pack into a large jar, add cloves and cinnamon and top up with cheap brandy. Leave to steep till Christmas.

The brandy is lovely and fragrant and once you have drunk it the marinaded quince makes wicked mince meat in the place of some of the apple in any recipe you find.

Failing that, send them to me!

Quince Brandy sounds fab. Thank you so much for that. On closer inspection they are quite small, so I churned out a batch of jelly but still have plenty left. Do I have to peel them first before I put them in brandy?

I have made quince vodka!  Looks awfull in the large pickle jar but I am asured it is yummy.

2 ripe quinces washed
100g golden caster sugar
750ml vodka
1 cinnamon stick (optional)

Grate the quinces, cores and all.  Put in to  a 1ltr sterilised preserving jar.  Add the sugar. Add vodka and cinnamon.  Close lid and shake to disolve the sugar.  Store for 2-3 months.  Add more sugar to taste and strain into bottle for serving.  Hey presto!  simples!
