I grew them once years ago, but they looked so much like deadly nightshade, or something equally poisonous that it put me off. I believe you're meant to cook them before you eat them.

Suggested uses from my website :-
Suggested uses for Huckleberries include, Huckleberry Ice Cream, Huckleberry Wine, Huckleberry Jam, Huckleberry Crumble, Huckleberry Pie, Huckleberry Chutney, and a Huckleberry syrup for pouring over Pancakes and Waffles.

As I have very mixed feelings about the culinary worth of Huckleberries, I will not be rushing to grow them again! They need a great deal of sugar to make them palatable, and much lemon juice added for jam making. Once cooked, I would describe the colour of the liquid as a rather curious violet, or the colour of dilute “Quink Ink”! They certainly have novelty use in Huckleberry Ice Cream!!

I tried and won't be growing them again - although they were easy to grow and fruited well they didn't tast of much.  The only use I could see was as a "filler" to bulk out jams etc made from other (tastier) fruits. Which is a shame because we don't eat jam.   Apparently they are very good for you!

I've grown chichiquelite huckleberries this year which are supposed to be more palatable and don't require cooking. Their flavour isn't as bad as you suggest the std huckleberry is but is nothin to write home about. Not sure about using them as a filler as they are quite small and so it would be a pain to harvest large quantities
You could try using them in muffins or samll cakes like you would with blueberries but it might be worth making a tasty cake mix to compensate for the iffiness of the berries.

I grew Huckleberries a couple of years ago and haveng tasted one which I found revolting, I bagged all the plants and took them to the dump. I felt they were too vile even for the compost bin.  Why on earth they sell the seeds is beyond me!
There is no better show of antisipation than a man sowing seeds in a field.
