Last night I sliced up a giant courgette into 1" rounds and removed the seedy middle bit , leaving a hole into which I put cherry tomatos. The whole lot was coated  in olive oil and dried marjoram, salt and pepper. It took about 30m in oven at 200.  It looked really pretty and tasted delicious. :tongue2:
The less time you have, the more becomes available.
