If I bought a ready-made Rosemary and Sage...

how likely would they be to survive the winter if I planted them round about now?

I no longer have access regularly to my old rosemary (and the sage bush died) and i'm finding that they are sooo very essential I want to grow some more in my new garden.

Because I don't have access to any woody stems to propagate from, if I bought a couple of new pots and planted them out now, would they die over winter or would i need to protect them in some way? or would they be okay?

They are very hardy and you'd need no protection.
Did it really tell you to do THAT on the packet?

They don't mind the cold, but they don't like  wet feet so well drained soil is essetnial
trying to be green except when blue

My sage never seems to survive despite adding grit to the planting site so this year I planted a new one in a ceramic pot and sunk it into the end of my raised bed. Rotation wise this year, the sage is next to my onions !!! :lol:
I work very hard so don't expect me to think as well.
