Help me out - competition

I have a bucket of small/medium sized Maris Pipers and two large cooking apples...

I need a recipe to impress Mrs Scabs when she gets in from work and that will earn me brownie points!

The winner gets a year's worth of smiles and gratitude...

Hi

I know this is with sweet potatoes but with the sugar, spices and herbs it could work:

Never made this, just searched for recipies on the net with potatoes and cooking apples.

     Servings     
US METRIC
 


INGREDIENTS (Nutrition)
3 sweet potatoes, peeled and quartered
110 g firmly packed brown sugar
2 g ground cinnamon
3 g ground nutmeg
2 large cooking apples - peeled, cored and cut into 1/4 inch rings
 
30 g all-purpose flour
55 g firmly packed brown sugar
55 g butter
30 g chopped pecans

DIRECTIONS
Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
In a small bowl, mix brown sugar, cinnamon and nutmeg.
Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
Bake in the preheated oven 30 minutes, or until lightly browned.

Another one  - how about potato and apple fritters - yummy! esp with spices and dried fruit added! - ciniman, nutmeg and mixed spice.

How about a simple version of potatoe dauphinoise - thinly sliced potatoes (par boil if you want to speed it up) layered with onions with cream/milk and herbs/garlic poured over, slowly cooked in an oven (top with cheese if you have any) and serve with any meat that you may have - chops, sausages etc. Followed by apple crumble  :D
Staffies are softer than you think.

Another one....

Apple and potato soup:

Ingredients
2 cooking apples, peeled and sliced
2½cm/1in fresh ginger, grated
1 onion, chopped
2 tbsp vegetable oil
4 potatoes
3½ pints water
salt and freshly ground black pepper

Method
1. Heat oil and sweat first 5 ingredients for about 5 minutes until soft but not brown.
2. Season, add water and cook for 15-20 minutes. Liquidise.
3. Serve with a swirl of cream.

I'll let you knw what I chose in a bit, I've only just got in from picking up a load of windfall pears from a really nice Freecycler...

What about some lovely chips with the potatoes. Make some paper bags from greaseproof paper and go and sit in the garden to eat them.  You could do the apple fitters as well.
Cant beat eating chips out in the air and there wouldn't be a lot of work involved.

All magnificent ideas, but in the end I went with an erxperiment... basically, potato dolphinose but with layers of apple too.

Potato, onion, herbs and pepper, apple, cream, potato, onion, herbs and pepper, cream, apple, potato, onion, herbs and pepper, cream, grated cheese....

I par-boiled the spuds and it went into the oven at about 180 for 20 minutes, just dropped it down to 100... how long should I give it?

I just stab with a knife and if it's soft and the cheese is bubbly or going brown then it's done not very technical but seems to work for me  :lol: . Shouldn't take too long as you had already par boiled your potato slices. hope Mrs Scabs appreciates you doing this.
