I'd go along with the others - concentrate on the core half dozen to ten things you know you will eat every scrap you grow.  Useful to make as many as possible of those the robust ones!  Also useful for first year to see how things like courgettes like your soil so you can decide how few to risk next time and avoid co0ntributing to  the great EEC courgette mountain.

Don't quite understand what you have against planning - after all unlike reality, in the planning my back never gives out, the slugs don't attack, germination rate is 100%, rainfall is exactly the level required for perfect results, blackflies fly somewhere else, blight is just a word I heard somewhere, lettuces dont bolt, and OH puts a splash of Scottish brown milk in my cuppa.....
The Dales - probably fingerprint marks where God's hand touched the world

Hahaha that's true!  I have actually started a plan, it's just my confidence isn't really sky high being a complete newcomer to veg/fruit growing (other than toms in pots and fruit trees) and I don't really want to look a complete prat by getting it wrong!  I have certain things I really want to find space for, such as:

Kale (this is number 1 priority probably as it's an all-rounder for us and pets)

Spuds - have been told to only grow red skinned on my plot by others with nearby plots, no idea why, didn't dare ask but will do next time.

Dwarf fruit trees - pref. a gage or damson, not sure what else.

Savoy cabbages (for me, yum yum)

Sprouts

Peas

Beans of some kind, not fussed which but would like slightly different, eg. borlotti, as well as french and broad

Onions

Garlic

Squash

Greenhouse stuff (toms, cucumbers, aubergines, chillis/peppers).

Is that a ridiculous list?
