Courgette and Pineapple jam

This is a recipe  I've adapted from an old book and its worked good enough for everyone to be eating it without going YUK.  I've made it several times now and its worked each time so here goes.

1lb 12oz or there abouts peeled courgettes.  If really big take out seeds before weighing
Juice 2 lemons
1 tin Tesco value pineapple pieces, drained.  The tin says 540g, drained weight 340g
1 bag Silver Spoon Jam Sugar with added pectin.

Put peeled courgettes in food processor and blast until almost chopped.  Add drained pineapple and give a short blast  to finish. It needs to be fine but not too fine but not pulp.
Scrape into jam pan, add lemon juice and sugar.  Give it a good stir to get the juices running.  Put on a low heat and stir until all the sugar granules have melted then bring to  boil and boil fast for 4 minutes only.  That's it.  Pot into hot sterilized jars and seel.
 Its not bad, honest ::)

I try to take one day at a time, but sometimes several days all attack me at once...

That sounds really interesting and something different to do with the courgettes, thank you for that!

Where do you buy jam sugar from?  Do they sell it in the supermarkets?  I have looked in mine for pectin but I haven't spotted any yet.

I buy it in Tesco.  It was £1.06p for 1kg bag this week. I used to make this recipe with ordinary sugar and marrow, but it never set, it was always like marrow and pineapple in syrup.  This is much better and because it only needs 4minutes boiling  tastes lovely.

Make sure you've got a good fast boil before you start the timer for 4 minutes

How good does that look  :ohmy: :D and a brillaint use for some of those courgettes too. I like the fact that it dosen't make 25 lb as well. :wacko:.. variety is good  :nowink:

Thank you for the recipe.  Here are 3 of the 4 1/2 jars I made:



These ones will go into my Christmas hampers.  Now I can't wait for more courgettes  :)

You cant taste the courgette Poolfield, they are just a carrier for the lemon juice and pineapple flavour

Have been avoiding this thread on purpose as cant get my head around this jam either :unsure:.

Coarse grater? for the courgette and just chop pineapple with a knife?
