Planting out winter veg

Ok, 1st proper year growing.  Everything going well in my 3 large raised beds.  However, I sowed some PSB, brussels, red russian kale and red cabbage for late autumn / winter in late May (approx).  I now have a load of plants in medium/large pots which have been ready to plant out into my beds for ages!  I had thought my peas, BBs and calbrese would have been finished by now, but they're only just ready for clearing this weekend.

Question:  is it worth going to the hassle planting these winter crops out?  Ive read that they will bolt easily if they've been stressed (Im pretty sure all the nutrients in the pots must have been used up and they dont look too great).  Also concerned that they might not have enough growing time left.  Or should I just sow a load more winter salad crops, spring cabbage and autumn king carrots?

Must say my peas and calbrese have been great - wasnt holding out for a big crop given my lack of space, but we had about 1 month feeding from them  Here's hoping my winter crops dont let me down.
