Globe artichokes

Last year I planted some globe artichokes in a pot and transplanted them this year into a raised bed.
A few heads are beginning to form, and as this the second growing season, should I let the heads develop or discard them.

Planted 100 earlier this year along a southerly wall, any good tips for globes next year.
