Beetroot Leaves

Does anyone know if you can make anything from the beetroot leaves and stems. it seems such a waste to throw them away.

The leaves i have are left over from lifting the bootroots , i think there to bit for salads

I wondered the same , I ended up putting them on the compost, I did google to see if the piggies could have them but that was a no no they they went on the heap  :wub:

Yes you can eat them!

Try this combination if you want something a bit different;

Boil three medium sized beets and skin. Slice thickly.
Trim and cook leaves in small amount of water for about ten minutes

Combine leaves and beets, and pour over dressing

Dressing: 4 tbs olive oil, 2tbs red wine vinegar, 2 tbs horseradish sauce, one crushed garlic clove, all combined.

Really tasty!

i am really glad i read this thread theyhave only had 3-4 leaves and seem fine so hopefully it hasnt caused them any harm. thanks again

Your welcome, its the same for celery its a no no for them, I only know because i used to belong to a piggie forum  ;)

In my Greek cookery book it says just cook in pan with olive oil until just wilted. Add lemon juice and cooked beetroot (cut into wedges), salt and pepper to taste and combine.
Serve with garlic sauce - crushed garlic, mashed potato, breadcrumbs, olive oil, lemon juice, white wine vinegar,s&p. Had the sauce in Greece; beware, it's lethal.
I started out with nothing.....and I've still got most of it.

hey get used in salads and also stewed and dressed with oil and lemon , i dont like them this way
