Can you freeze onions successfully
« on: July 08, 2009, 21:17 »
I have grown rather too many onions this year and was just wondering whether I could freeze some for the winter.  I know I can store some of them but was thinking about storing chopped onions for when I am in a hurry or when someone else wants to cook

I've frozen them after chopping and frying (with some bacon lardons which needed using up).  Don't know about freezing them raw though.
I try to take one day at a time, but sometimes several days all attack me at once...

Wait til you've got too many courgette and tomatoes and peppers too and make roast veg, it freezes brilliantly

We have similar situation - too many onions (is there such a thing?).

My OH has chopped / sliced and frozen them so I really hope it does work - she is usually right so........ we'll see later in the year!!  ::)

I guess you could dry them and store them in airtight jars.

I'd go for drying as opposed to freezing because of the high water content. However, how long does it take you to peel and chop an onion? 1 minute at most! They store well and we've usually got onions until at least April if they're hung from rafters or hooks in the shed in bunches.

Normally I'd be pleased to hang and dry all of the crop but.... some had signs of white-rot so they would not store... chopped and frozen we stand a chance of saving them for later use.

The best of the crop (most of it) is hanging from the rafters of the garage as usual.... all these autumn sown.....being used as needed.

This year's onions still on the plot but nearl ready for lifting.  ;)

The response was for wyandotty not yourself :D! It will either work or not....I'm dubious as it's not something I've tried unless incorporated into dishes where they've already been coated in oil (as in roast veg).

I've frozen onions before and they freeze very nicely. Only problem is that no matter how heavy the freezer bag is, the whole freezer eventually smells of onions. Not very nice when you want toast or a bit of fruit.
