Bolting

Hi all,

I've read a few posts about bolting and people seem to suggest that once something bolts, e.g. lettuce, then it all goes to waste.

Once you see it going, surely its ok to pull it up and eat it at that point? Or have I misunderstood what people are saying?

You can eat it, it's not poisonous, but the quality's shot it!

In the case of, for example, a little gem lettuce, it's nice crisp heart will have gone by the time you notice it running to seed.

Running to seed, by the way, is not necessarily bolting, this is part of the natural cycle. Bolting is when it does it prematurely.
