Hello,

I have made some elderflower cordail following Hugh Fearnly Whittingstones recipe, but now it is ready it seems incredibly sweet.  Although it tastes ok, just waaaay too sweet.
Can I add some more citric acid to this to adjust it all, or should I just trial and error on recipes?

Also I have noticed some people mentioning plastic bottles. I have put my cordial into glass bottles with a flip top button, bit like  a grolch bottle. Will it be allright in there. I have not seen any signs of fizzing at all, and it is a very beautiful colour, sort of light brown.

You may want to try adding more lemon juice to adjust the sweetness

Cordial will be fine in glass bottles because there is no fizz and so no pressure build up

If you make elderflower champange then there will (should) be fizz so the pressure build up may be a problem with glass bottles. I always get 1ltr plastic bottles for champange.

Never had one burst yet but would much prefer an exploding plastic bottle over glass anyday

I also found my first batch of cordial a little sweet. Added a little extra citric acid (or lemon juice) and elderflowers for the second batch.

Have to say I use glass bottles for my champagne too but I let some of the fizz out periodically and not have a problem. Might change my mind if I ever  had an explosion!

I've made cordial for the first time this year and also found mine a little too sweet.  Next time I'll add a lot more lemon juice when I make it, and I'll probably add some to the second bottle when I open it, but for now I'm just adding a small squeeze of lemon to each glass as I pour it.

Hi, it sounds like a fermentation problem ( lack of fizz) these recipes that use wild yeasts are a bit iffy plus if it's too sweet it hasn't used all the sugar. I would use a proper wine yeast and don't bottle too soon. Plus if it hasn't worked well it will be low alchahol.
