Rocket and cress hitting the roof

I sowed a car-wheel-size area with these and have been cutting'n'coming again, some of them were getting rather large to be honest, but when I went away for a week I thought they would be OK.  Except that they have gone totally barmy now, the rocket has developed flowers and both types have really thickened up.

Should I just pull the whole lot and start again, or can I just cut them right back and they will start to develop tender little baby leaves again?

Lettuce you can cut so it will regrow, but once rocket has flowers the taste gets really strong and not many people like it, so unless you do you'll have to pull it and start some more :)

If you leave a rocket plant to flower and seed you will have masses of free seedlings for years to come.
Sown late summer rocket will not run to flower so quickly - you can pick from Oct to April
Playing all the right notes but not necessarily in the right order!
