Elderflower fermentation ?

Elderflower fermentation ?

How long does it take for the natural yeasts in the elderflowers to start working ? My first batch of champagne showed no signs of life in 48 hrs so i gave it a `nudge' with some wine yeast.
It`s working now but should i have given the natural yeast a bit more time ?
Also is it worth giving it a filter at 1 week old.

My first batch didn't show much signs at 4 days but then picked up a bit. The second batch, different recipe, more sugar what much more active at 2 days, bit sweet but hopefully settle down as more ferments. Would give it a bit more time. I am still experimenting as this is my forst year playing.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Thanks for that Kate , i was thinking that i had a duff lot of flowers. I`m used to adding yeast and getting instant action.
The brew is working nicely now but there are some solids fermenting out and gathering in the neck of the bottles , might give `em a squeeze to eject it then top up before screwing the tops down for the last time. :)
