 :(I am new to growing sweetcorn. The plants are all doing fine - about 18 inches high and look healthy enough. Some of them are developing a couple of sideshoots from the base.
I would guess that I should pinch them out to concentrate growth in the main stem but am open to advice from someone who knows!

We all leave them.  You risk damaging the roots if you remove them.
