Can any of you experts tell me if I should cut the stems back once they have finished flowering to encourage more growth..or is it, when they're done they are done?

I deadhead my scabious ('Butterfly Blue') by cutting the stems of flowers that are past their best.  I don't know whether I really need to, but it does seem to go on flowering for ages so I don't think it hurts!

When I had scabious, I used to deadhead regularly and they went on forever! 

Personally, I'd say yes.

I never deadhead poppies, as I like to leave the seed heads to form.

I never get a 2nd flush from my poppies so they must be a one-time show. Don't grow the other.
