Eating beetroot

I know this has been mentioned on the forums somewhere, but it's been a long day and my mind is to frazzled to search.

Can you eat the leaves of beetroot and, if so, care to share a recipe ?

Yes you can. Young ones are nice in a salad. Not sure if you can cook them tho.  I think you can, but don't quote me!

Treat them a bit like spinach and just wilt them - i.e. just show them the pan of boiling/simmering water for 30 seconds - I minute. Then experiment :D

As salad they are great too as farmersue says, but pick em young or they are as tough as old boots

The Romans only ate the tops and discarded the root, and as mentioned they are a Beet, so related to Perpetual Spinach (Spinach BEET) and Swiss Chard (Seakale BEET) so if small treat as Spinach, and if a bit larger maybe treat as Turnip tops and boil them and have as or with mixed Greens (I often boil an Onion to have with boiled Greens) so looking forward to some Beetroot tops to add in as well.

PS The other members of the family are Sugar Beet and Mangoldwurzels (For animal feed).

So, that's 3 votes for "no they're not poisonous" and .... urm ... it would appear that the "noooooo, don't eat it, it's poisonous you fool!" brigade has died out ;)

I wonder what other leaves I could eat .......

Yes they did and I STILL eat them with salad when I thin out, without any worries. Each to their own  :blink:

it's stupid to say you cant eat the leaves when they've even bred some for adding to mixed leaf salads :D There's nowt so strange as folk :dry:
