Trees tend to cast shade and take a lot of water & nutrients from the soil.

Now that you've got stuff in I'd just make sure that they have enough water - stick your finger a couple of inches down and if it's not moist, add lots of water.  Don't add a little and often, add lots not so frequently (plants will be far more drought resistant if the roots are forced to go deeper for water rather than being shallow rooted).

Also, add fertiliser to compensate - growmore or fish blood and bone (the former isn't organic) are balanced fertilisers.  Depending on what you're growing other fertilisers may be appropriate at different times of the season, have a look at the Info section on the tabs above and there's articles on fertilisers.
I try to take one day at a time, but sometimes several days all attack me at once...

Yorkie has put up a lot of good points for you to watch for. In fact, you might have to eventually create raised beds as the trees continue to mature and strip the soil of nutrients, along with invading roots. Raised beds will put less strain on your plants and you can situate them where you get the most sun.
