ok

so I suppose if you want to keep them for longer then in the fridge but if you tend to use them up pretty quick they are ok on the side its just the extreme changes in temperature that is a prob!!

More or less.

They are better in the "pantry" rather than in the kitchen.  An old fashioned pantry would have a fairly constant temperature and humidity.  A modern kitchen swings from hot to cold and dry to steamy.

I like my eggs as fresh as possible so I keep them in the fridge.

mine go straight in the fridge,

When I was a milkman many years back we where told that most lion brand eggs where 2 weeks old before they got to us    how true that is I don't know.
He who asks is a fool for five minutes, but he who does not ask remains a fool forever.

Very true Rich.

You compare a shop bought egg to one that your girls have just laid and the difference is very obvious.

Ain't it just we hardly touch a shop bought egg when ours go off lay, but the wait is worth it. They make the most beautiful cakes  ;)

Even free range supermarket eggs are a poor substitute.  I bought some of those posh W'rose Colombian black tail (?) ones to make sure I had enough over Christmas.  They weren't a patch on my girls eggs.

Commercial free-range hens often don't get out of the shed and due to stocking density the grass and bugs are stripped from their range very quickly.  So it chicken feed only for most of them.

Never store mine in the 'fridge.  One set of Grandparents kept theirs in a cool larder, the other Grandparents kept  theirs in a dairy.  No leccy on their farm until 1955.

"organic" obviously doesn't mean that the hens are kept in good conditions :(

Organic veg boxes can (like so many other things) be a bit of a scam - cashing in on the latest 'must have'  craze  >:(

I never keep mine in the fridge either. When your using eggs for baking they always say use eggs at room temp.

We tried two different schemes, both sets of produce was good quality meat, dairy and veg. One was more expensive so we stopped that after a month's trial, the other is cheaper than the supermarkets, no packaging to speak of and the veg comes muddy so you know it hasn't been washed. You'll never get eggs that are as fresh as your own girls however hard you try (unless you have a neighbour who sells them asap).

I am keeping them in a basket on the side because they look nice too but my husband got me worried  ::) I use them quite quick so should'nt be a prob.

On the veg box scheme! I would like to find a good one but it is suppriseinly hard. I shop for some things at the local farm shop but even their veg is wholesale and when I asked them he explained that it is actually quite hard to find a local supplier everything else they do is local and from their own farm and resonable in fact their chicken works out cheaper than the supermarket !!!

would'nt it be nice to be self sufficient to know exactly what your eating!!!!
