Does anyone know if dried pulses, such as belotti beans and buckwheat that you buy in healthfood shops are viable to sow? It is just they are very cheap, and under £1/500g and would make them cheap enough to use a green manure even if they did not grow well enough to harvest.

No reason not to use them. They may have been dried at a high temperature and could have poor or nil germination. Try a few seeds and see if they germinate.

soak some of them in water for two or three days and see if they start to sprout.

I used shop bought pinto beans last year and got a good crop.

I've used shop bought lentils and fenugreek for sprouting seeds and they were fine.  They might not be the best varieties to crop in our climate, but for green manure or baby plants it's OK.  I'll have to try beans as an experiment for digging in.

If you leave them under water for more than a few hours they will 'drown' and start to rot even if they were viable before.  :ohmy:
I demand the right to buy seed of varieties that are not "distinct, uniform and stable".
