When to harvest pea shoots.

I have just germinated some Early Onward seeds on my windowsill  that I intend to cut young for salads. Anyone know the optimimum length for tenderness etc?

I usually wait until they are an inch above the first joint so that they can grow again before I chop any.

This means, that to have enough for any reasonable meal, a significant amount are well above an inch...some 3 or 4 inches.
