Think I would be inclined to start again. Unless you are sure, you would be risking the crop  for the sake of 10-15pence per tuber.

Bottom of the fridge would be a great place to store your new tubers until you are ready to start

Your seed potatoes will be fine.

Now they have broken their dormancy I think the temperature in a fridge may kill them. They must be allowed to grow now that their timeclock has started ticking.

Rub off the sprouts and put them in your greenhouse. They will then produce the sturdy chits you want. If frost threatens either cover them with something or bring them into the garage overnight. They do not need light at night.

Farmers chit in sheds with strip lighting 24 hours. If the chits get big they sometimes rub all the chits off and start again. Their chits have to be small enough so that they are not knocked off going through a mechanical planter.
