Thanks for the tips......... when I get the blessed things to grow (no luck last year) I'm going to try parsnip soup. :)

My mother used parsnips to bulk jams in 2ndWW when fruit and sugar were in short supply. But I think I'll go with the soup!! ;)

if you roast the parsnips before you make the soup its doubly delish - friend adds sweet potato and cumin to hers and it tastes a little like korma curry - yummy

I like to add some green lentils to parsnip soup, and sometimes a bit of celery or turnip for a bit of body to the flavour - just parsnips (especially the weedy little supermarket ones) can be a bit cloying for me.
