3lb pumpkin
3lb apple
1lb onion
3/4lb sultanas[optional]
1 ½ pints vinegar
1 lb sugar
2tsb ground ginger
1tsp pepper
1tsp ground clove
1tsp cayenne

Finely chop or mince together all ingredients
Put all into a large saucepan with vinegar and spices
and cook until softened and slightly reduced,
then add sugar. Continue cooking
until thickened.

Going to give this a go tomorrow, anyone ever tried pumpkin chutney  :?

Nope never tried it I'm about the only one who eats pumpkin in my house. Usually they are just grown for Halloween, or growing comps between the kids.

Will be handy for next year tho'  :D

We've still got two pumpkins in the garage.  A Pumpkin Pie won't use up very much and we've enough chutneys to keep us going for years! The freezers are full (ones on its last legs, only seems to keep temperature on superfreeze) replacement arrives on Tuesday (bigger of course!). Think this time they'll have to be made into soup.

Made some squash chutney but it doesn't look as nice as that.

Tried the first of the green tomato and apple chutney at a barbeque at the weekend.  It was fantabulous.  SWMBO had been giving me grief for the vinegar smell all last month - she has eaten her words as well as the chutney  :D
