Storing/ripening green chilli's

I'm just clearing out my mini greenhouse and have hung the ripe chillis up to dry. I've a fair few that are still green. Will they dry out ok when green? Or is it best to ripen them on a window sill first? Any advice pls. alternatively i'll give most of the green ones away!

Put them in with a ripe bananna. This will speed up the process.

Most of mine were green (my fault for planting them behind the tomatoes so they didn't get enough sun  :oops: ) but they dried perfectly well, and were still quite hot. Although i'm a bit of a wimp when it comes to chilli's so what is hot for me might not be for someone else.

i've had great success wiht my chilli's got hundreds of the things,i've dried some in the sun and some in the oven then minced them for cooking.
it intentsyfies the flavour and makes them much hotter.
dry some whole put 10/20 in a bottle fill up with the cheapest vodka you can find leave for a week in the airing cupboard then a week in the freezer give it a try very nice will warm you through when it gets to a flavour you like decant it it wont get any hotter and refill the bottle this one will be much more suttle and really smooth decant when ready and eat the chilli's no heat but full of flavour  (don't sip it as will burn your lips)
i also do it with rasberrys and cherrys but they need to be left for about 6 months
Its sometimes better to let people think your an idiot than open your mouth and confirm it

just wondering what is the difference between green and red chillies ?, it's my first year growing them, I have loads of green ones and have been eating them, this week I noticed one chilli is turning red, whilst several others are turning jet black

Green are generally milder unripened pods.
Flavour tends not to be great whilst green.
