Freeze Aubergines? I just wondered as mine have all given up the ghost so i look like buying what i need but theres only two of us and Neil not as keen on them as me. So i wondered if i could use half freeze half if they freeze well.

I've never frozen them except in soups, but would have thought they'd go a bit floppy when defrosted? Depends how you want them cooked afterwards???
You could always try one and see what happens!!

They won't freeze well. You're better off making a basic ratatouille or baba ganoush and freezing that.
