... what's the best way of freezing pumpkin? Should I roast it first and then freeze it, or can a freeze it partially cooked or raw??

The best methods i've found are blanching,mashing and roasting they always produce good results

I make Pumpkin soup and then freeze that in portion size containers. Nothing like a bowl of thick creamy pumpkin soup with home made bread for a saturday lunch after a morning outside in the winter.
