hi, all daft question but how do pickle your red cabbage.
l love the stuff but don't have a clue how to do it .. :(  so any help would be great thanks.... :D

slice it, lay on a large glass or china plate and sprinkle well with salt.  Leave overnight, then rise throughly.  Pack into jars, and pour over with spiced vinegar, which has been bought to the boil and cooled slightly (so that the jars don't crack).  Seal, label, wait and enjoy.  Mrs Bouquet

i cut mine, washed it in salt water, put it in jars, poured pickling vinegar in jars to brim,added spices ( only those i had in cupboard that i thought would be ok,, mustardseed, pepper corns etc  ) and put lid on ... that was about 8 weeks ago, we were ate 1st jar about 2 weeks ago ....... yummy!!!! saving others for Christmas and prezzies! :wink:
if it grows, it grows! if it doesnt ,, ah well .. there's always next year. :-)

Don't keep the jars too long as the red cabbage starts to go soft after 2/3 months.

By the way, it doesn't matter if you haven't got a large plate, you can use a large glass bowl, but then you will have to put in a layer of cabbage and then a layer of salt and build up like that.  Soaking it brings out the water content from the cabbage. Mrs Bouquet

thanks for the tips but what vineger should l use? clear or malt? never seen anything with pickling vineger on it?

Sarsons do a large bottle of clear pickling vinegar. we get ours from "the shop we don't mention" ( pestco )
