I have quite a lot of redcurrants and was wondering what you have experienced to be the best route to go down with them. I'm quite happy trying bizarre things.. well more than happy really. Any ideas?

I clean the berries then boil them down to mush, then force them through a strainer. The result is often mixed with raspberry juice to make a jelly, or the red currants made into a jelly itself which I use to melt to top crepes with. If I have a surplus of the jelly I freeze it in containers so that later I can turn it into whatever I need.

Thanks, might try that. Didn't know you could make a jelly on their own.

Many years ago you used to be able to buy red currant jelly but it seems to have fallen out of favour for some reason. Has a nice taste on its own. Now I have to make mine to have some for a specialty Norwegian crepes dish I make which really suits the red currant jelly. Mostly I make the red currant and raspberry combo - very good.

I meant to say that I freeze leftover red currant juice (not jelly) for other things.
